1 tbsp baking powder
1 tsp baking soda
1 tsp salt
2 cups fresh or frozen blueberries
1 cup diced unpeeled apple
2 tbsp grated lemon peel
Preheat oven to 350 degrees
In a large bowl cream butter and sugar until light and fluffy.
Beat in eggs, one at a time.
Add milk, sour cream and vanilla.
Gently stir in flour, baking powder, baking soda and salt.
Fold in the fruits and lemon peel.
Spoon batter evenly into 2 greased 9"x5" loaf pans.
Bake for 60-65 min.
Allow to cool for 15 min before removing from pan.
The recipe can easily be halved.
You can add a crumb topping made of 2 tbsp flour, 1tbsp sugar, 1 tbsp butter and 1/2 tsp lemon peel.
You can also substitute raspberries for blueberries.
Enjoy!
