Kaiser Rolls

This great recipe for Kaiser rolls comes from Taste of Home. If you like  bread and rolls, you got to try this, and if you have been looking for the perfect sandwich roll, this is it. Ingredients 2 packages (1/4 ounce  each ) active dry yeast 2 cups warm water (110° to 115°),  divided 4 tablespoons sugar,  divided 1/3 cup canola oil 2 teaspoons salt 6 to 6-1/2 cups all-purpose flour 1 egg white 2 teaspoons cold water Poppy  and/or sesame seeds Directions In a large bowl, dissolve yeast in 1/2 cup warm water. Add 1 tablespoon sugar; let stand for 5 minutes. Add the oil, salt, remaining warm water and sugar and 4 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. Pain au beure

This is a classic  Celebration bread from my home in Martinique, in the Carraibean. 500 g de farine ( 3  1/4-1/3) 1 sachet de levure de boulanger 125 g de beurre 1/2 verre de lait 2 oeufs 1 cuillère à café de sel 1 - 2 cuillère à café de sucre 1/2 verre d'eau Put it all in the bread maker on dough circle. When ready divide into 3 long ropes and braid it.

By now, you will have find out that I love bread Here is another new favorite of mine. Egg-enriched White Loaf   (I have included the measurements for a bigger loaf in parenthesis) 1 Egg plus enough water to make 1 1/3 cup  (2 eggs plus enough water for 1 7/8 cup or 15 fl oz or 430ml) 2 tsp sugar (1 tbsp sugar) 1 tsp salt (1 1/2 salt) 2 Tbsp butter or margarine 4 1/2 cup flour (6 cups) 1 tsp yeast (1 1/2 tsp) Add everything to breadmaker, basic setting and voila. I have been making the dough in the bread machine though, and baking it in a bread pan. It is delicious! I also have substituted some whole wheat flour for some white flour. Enjoy!

French bread recipes

Being a french national, I love french bread and so does my family. Here are 2 recipes that we love at our house Baguette Viennoise 240 ml milk 1/4 cup +2tbsp butter or margarine 2 tbsp sugar 1/2 -1 tsp salt 3 1/2 cup +2 tbsp flour (I substitute a cup with whole wheat flour sometimes) 2 1/2 tsp of yeast Put all the ingredients in the bread machine as usual. Put on dough setting. Take dough out when done and cut in two. Roll each piece of dough in a rectangle and roll up or fold in three (I personally prefer rolling). Put on a cookie sheet sprinkled with cornmeal, and let rise 20 minutes (the rising is actually optional). Bake at 400 for 20 minutes. You can brush some milk on top before baking and make some incisions as well. French bread 4- 4 1//2 cup of flour (i use 3 1/2 cup flour and 1 cup whole whole flour) 1 tsp sugar 1 1/2 cup water 1 tsp salt 2 1/2 yeast Put all ingredients in the bread machine, put on dough setting. Favorite bread recipe

Here is a recipe to our favorite bread recipe: Portuguese Sweet Bread 1 cup of milk 1 egg beaten 2 tbsp margarine or butter 1/3 cup sugar 3/4 tsp salt 3 cups flour (I replace 1/3 of the flour with whole wheat flour) 2 1/2 tsp yeast Put ingredients in bread maker according to your machine's instruction. I use the dough setting. Then shape it the way you like it and let it rest for about 45 minutes. Bake at 350-375 for 30 minutes. Et voila. This last time, since I prefer smaller loaf, I doubled the recipe, cut the dough in half, baked one half and froze the other one.\ Enjoy!
