Apple Pie

It is apple season so here is a classic recipe for a classic dessert: Ingredients: For the dough: 2 cups of flour 2/3 cup butter 1 tsp salt 5-6 tbsp of water For the filling 2 1/4 lbs apples (1kg) 3/4 cup raisins (washed and dried, 100g) (optional) 3/4 cup granulated sugar (40g) 2 teaspoons cinnamon (or more to taste) 1/2 teaspoon nutmeg (to taste) 2 1/2 teaspoons lemon juice (or more to taste) 3 Tbsp flour or semonila Directions: For the dough:. Mix the flour and the salt in a bowl. Cut the butter or margarine into small cubes and add these to the flour mixture using a pastry cutter until the mixture look crumbly. Add the water in 1-2 Tbsp at a time and mixing it in with a fork. Using one hand, kneed it to form the dough - you should be able to form it into a ball. Put the ball of dough in the fridge wrapped in wax paper. For the filling: Peel the apples and slice them (allow the sizes to vary--it'll taste better). Apple Coffee cake

Ingredients: Coffee Cake 1 1/2 cups all-purpose flour 2 teaspoons baking powder 2 large eggs 1/3 cup milk 1 teaspoon vanilla extract 1/2 cup granulated sugar 1/4 cup butter, softened 1 large apple, peeled, cored and thinly sliced Streusel Topping 3 tablespoons all-purpose flour 3 tablespoons powdered sugar 1/2 teaspoon ground cinnamon 2 tablespoons butter, chilled Direction: Preheat oven to 350°F Grease a 9-inch round cake pan. In a small bowl combine flour and baking powder. Beat eggs, milk and vanilla in another small bowl. In a large mixing bowl combine sugar and butter; beat with an electric mixer on medium speed until creamy. Alternately add flour mixture and egg mixture, beating well after each addition; end with flour mixture. Spread into prepared cake pan. Arrange apples on top, gently pressing into batter. Apple Oat Coffee Cake

Ingredients 1 cup all-purpose flour 1 cup Quick Cooking Oat 3/4 cup sugar 1/4 cup margarine, softened 1 cup milk 3 teaspoons baking powder 1 teaspoon ground cinnamon 1/2 teaspoon salt 1/4 teaspoon ground nutmeg 1/4 teaspoon ground allspice 2 egg 2 medium apples, chopped (2 cups) Oat Streusel: 3 tablespoons butter or margarine 1 cup quick-cooking oats or 1 cup old fashioned oats 1/4 cup all-purpose flour 1/4 cup packed brown sugar 1/4 cup chopped nuts Directions: Heat oven to 350°F degrees. Grease square pan, 9 × 9 × 2 inches. Prepare Oat Streusel; set aside. Beat remaining ingredients except apples in large bowl with electric mixer on low speed 30 seconds, scraping bowl frequently. Beat on medium speed 2 minutes, scraping bowl occasionally. Stir in apples. Spread half of the batter in pan; sprinkle with half of the streusel. Top with remaining batter; sprinkle with remaining streusel. Bake 40 to 45 minutes or until toothpick inserted

Baked Pasta in White Sauce

Found this off the internet. SAUCE 2 TBSP unsalted butter 3 TBSP flour 1/8 tsp nutmeg salt and freshly ground white pepper to taste 2 cups milk, heated FOR THE PASTA 1 cup grated cheese: Parmesan, Pecorino, Cheddar, BelPaese, Swiss 1-2 cups cooked ham, chopped 1/4 cup butter salt and pepper to taste l4 oz short pasta (penne, ditali, maccheroni, ziti, mostaccioli, etc) FOR THE SAUCE: 1. MELT the butter in a saucepan over very low heat till liquified and just bubbling. 2. ADD the 1 T of flour to the butter, stirring constantly with a wooden spoon till smooth - then slowly add the rest of the flour and stir till smooth. 3. ADD the milk  1/4 cup at a time. When milk is absorbed by the butter-flour mixture, add a little more increasing quantities as you go along. 4. ADD nutmeg, salt and pepper to taste and continue stirring with the sauce at a slow bubble till sauce has the consistency of heavy cream. You can add red pepper flakes as well according to taste. This great recipe for Kaiser rolls comes from Taste of Home. If you like  bread and rolls, you got to try this, and if you have been looking for the perfect sandwich roll, this is it. Ingredients 2 packages (1/4 ounce  each ) active dry yeast 2 cups warm water (110° to 115°),  divided 4 tablespoons sugar,  divided 1/3 cup canola oil 2 teaspoons salt 6 to 6-1/2 cups all-purpose flour 1 egg white 2 teaspoons cold water Poppy  and/or sesame seeds Directions In a large bowl, dissolve yeast in 1/2 cup warm water. Add 1 tablespoon sugar; let stand for 5 minutes. Add the oil, salt, remaining warm water and sugar and 4 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. Punch dough down. Turn onto a lightly floured surface; divide into 16 piece
