Wheat free recipes

My youngest son (3) has been having pretty bad ecxema. A friend of mine told me to try to get him off wheat to see if that could be a reason. So this week has been wheat-free for him. I really feel bad for him since he is a bread and jam and butter boy. I must say though that I have been impressed by his restraint and compliance with the new rule. Anyway, I found these two wheat-free recipes that I tried this week and which everybody enjoyed. So here they are: Wheat-free feather pancake Ingredients: 4 eggs 1 tsp. baking powder 3 tbsp. sugar 1/4 c. water or milk 1/2 tsp. salt 1 1/2 c. white rice flour 2 c. sour cream or yogurt  (Any kind of yogurt works well) Directions: Blend all ingredients until there are no lumps. Drop batter by spoon onto lightly greased griddle until 1 side bubbles. Flip pancakes and bake until golden brown. Can be covered and chilled overnight. Cut it in half when I made it. Will do the whole recipe next time . Rice flour crepes (wheat free) 1 cup rice flour

waffle batter

I have finally found a waffle batter recipe that works for me, and I love it, so does everybody else in the familly. since i bought myself a waffle maker, earlier this year, I have been trying waffle recipes and they all kept spilling out of the waffle maker. I jst could not understand what was going on. I tried a recipe this morning and they came out perfect, plus they tasted great. Here is the recipe: 1 3/4 cup flour 2 Tbsp sugar 1 Tbsp baking powder 2 eggs 1 3/4 milk 1/2 cup oil or butter (melted) 1 tsp vanilla Combine all ingredients. Stir until moistened. Refrigerate until ready to use. Use according to your waffle maker. Enjoy!

Tostitos tacos

We are not fan of tostitos, yet we have a friend who keeps giving us some. Well, we found a way of making use of them. We use them as tacos and eat them topped with Texmex ground beef, sour cream, cheese and lettuce. Here is the recipe I use for the groung beef: 1 1/2 tbsp chili powder 1 1/2 tsp paprika 1 1/2 tsp cumin 1/2 tsp salt 1 tsp oregano 1 tsp garlic powder or crushed garlic 1/2 chopped onion some cayenne pepper if you like it spicy. Brown groud meat, then mix in the seasonings and add 2/3 - 3/4 cup water, and let it simmer until consistency you want, about 10 minutes. Adjust seasonings to taste, et voila. My older son really likes it: Making a mess  

French bread recipes

Being a french national, I love french bread and so does my family. Here are 2 recipes that we love at our house Baguette Viennoise 240 ml milk 1/4 cup +2tbsp butter or margarine 2 tbsp sugar 1/2 -1 tsp salt 3 1/2 cup +2 tbsp flour (I substitute a cup with whole wheat flour sometimes) 2 1/2 tsp of yeast Put all the ingredients in the bread machine as usual. Put on dough setting. Take dough out when done and cut in two. Roll each piece of dough in a rectangle and roll up or fold in three (I personally prefer rolling). Put on a cookie sheet sprinkled with cornmeal, and let rise 20 minutes (the rising is actually optional). Bake at 400 for 20 minutes. You can brush some milk on top before baking and make some incisions as well. French bread 4- 4 1//2 cup of flour (i use 3 1/2 cup flour and 1 cup whole whole flour) 1 tsp sugar 1 1/2 cup water 1 tsp salt 2 1/2 yeast Put all ingredients in the bread machine, put on dough setting. When done, separate in two and roll into a rectangle. shape in

Favorite bread recipe

Here is a recipe to our favorite bread recipe: Portuguese Sweet Bread 1 cup of milk 1 egg beaten 2 tbsp margarine or butter 1/3 cup sugar 3/4 tsp salt 3 cups flour (I replace 1/3 of the flour with whole wheat flour) 2 1/2 tsp yeast Put ingredients in bread maker according to your machine's instruction. I use the dough setting. Then shape it the way you like it and let it rest for about 45 minutes. Bake at 350-375 for 30 minutes. Et voila. This last time, since I prefer smaller loaf, I doubled the recipe, cut the dough in half, baked one half and froze the other one.\ Enjoy!

Still a novice

I recently started a blog on homeschooling and realize that I would love to keep my recipes in one place and be able to share them with others, so this new blog was created. i am still new at blogging and hope to be able to maintain both blog. Welcome to anyone who will come across this blog.
