Pain au beure

This is a classic  Celebration bread from my home in Martinique, in the Carraibean. 500 g de farine ( 3  1/4-1/3) 1 sachet de levure de boulanger 125 g de beurre 1/2 verre de lait 2 oeufs 1 cuillère à café de sel 1 - 2 cuillère à café de sucre 1/2 verre d'eau Put it all in the bread maker on dough circle. When ready divide into 3 long ropes and braid it.

Cream Cheese Cookies

Cream Cheese Cookies 1 cup butter, softened 1 (3 ounce) package cream cheese, softened 1 cup sugar 1 egg yolk 1/2 teaspoon vanilla extract 2 1/2 cups flour Preheat oven to 325 degrees F Lightly grease cookie sheets. In a large bowl, cream together butter, cream cheese, and sugar until light and fluffy. Beat in egg yolk and vanilla. Stir in flour until well blended. Drop dough by spoonfuls onto cookie sheet (or use a cookie press). If desired, make an indentation in the center with your thumb or other object; fill with preserves, or press candy into center. This dough is very versatile, lots of possibilities. Bake for 15 minutes in preheated oven. .

Delicious Italian Cookies

Delicious italian Cookies 165 g flour 165 g butter 100 g cornstarch 90 g powdered sugar 1 egg 1/2 teaspoon vanilla extract 1/2 teaspoon grated lemon zest To sprinkle cocoa powder chocolate chips brown sugar Directions Whisk butter and sugar than add the egg, flour and corn starch sifted, vanilla and lemon zest. Put in a pastry bag, than make several shape on a non stick baking mat. Sprinkle with sugar, cocoa and chocolate chips. Cook for 10-12 minutes @ 180°C/350°F.

  Triple Chocolate Cookie ( Courtesy of Ellie Krieger from Food network) Ingredients  1/4 cup granulated sugar 1/2 cup dark brown sugar 1/4 cup butter, softened 1/4 cup canola oil 1 egg 1 teaspoon vanilla extract 1/2 cup all-purpose flour 1/2 cup whole-wheat pastry flour 1/4 cup unsweetened cocoa powder (not Dutch processed) 1/4 teaspoon salt, optional 1/3 cup coarsely chopped dark chocolate (2 ounces) 1/3 cup coarsely chopped milk chocolate (2 ounces) 2/3 cup chopped pecans, optional Directions Preheat the oven to 350 degrees F. In a large bowl, mash together the butter and sugars with a fork until well combined. Add the oil and egg and beat until creamy. Mix in the vanilla.   Here is a great Thanksgiving recipe: Stuffed Pumpkin Ingredients For the roasted squash 2 Acorn or pepper squash, halved through the stem and seeed 2 tbsp of liove oil 1/2 tsp salt 1/4 tsp pepper sage, 4 cloves garlic For the Stuffing: 1/4 cup olive oil 1 pd of ground meat (used beef) 1 ognion, finely dices 1 carrot, grated 1 celery grated 1/4 cup of mushroom 1 clove garlic minced 1/4 tsp cayenne pepper 1/4 tsp thyme\1 tsp salt 1/4 pepper 2 tbp sage 1 1.2 tbp tomato paste 2 apples diced 1/2 cup breadcrumbs 2 tbsp parsley 2 tbsp chives 1 edd lighty beaten 2 tbsp maple syrup   Procedure: Roast the squash: Brush olive on in th inside of the squash. Sprinkle with salt and pepper. Place each halves open side down over a piece of garlic. Bake in a 400 oven until the squash is tender when pierced with a knive, but still hold its shape, 35-45 minutes. Apple banana bread

My kids love banana bread, and it's apple season, so here is a combination of the two. As usual courtesy of Recipezaar. I made a half recipe and it did not last the day. Banana Apple Bread  1 3/4 cups flour 3/4 teaspoon baking soda 1/4 teaspoon salt 1 cup sugar A pinch of cinnamon 2 eggs 2/3 cup vegetable oil 3 tablespoons milk 1/2 tsp vanilla 2 large bananas (mashed) 1/2 cup nuts (chopped) 1 large apple (peeled, cored, chopped) Directions Mix together flour, baking soda, salt, cinnamon and sugar. Blend in eggs, oil, and milk and vanilla. Stir in banana, apple, and nuts. Pour batter into greased loaf pan. Bake at 350 degrees for about 1 hour or until toothpick test comes out clean. Enjoy!

Apple pie

I had a favorite apple pie recipe, which I liked to make, mainly because it was very easy and tasted good. But, recently, I came across another recipe,which picture, of course, lured me. Mulligatawny (Indian) Soup

This is a very nice and good soup. perfect for those cold nights and very easy to make. It is as great way of using those leftover beef or lamb pieces and you can even use ground beef as well. Mulligawny Soup 1 large onion, chopped 2 carrots, chopped 1 apple, peeled, cored & chopped 1/4 cup dripping 2 tablespoons flour 2-4 teaspoons curry powder 5 cups beef stock 1 (14 ounce) can tomatoes, chopped salt and pepper 1 cup leftover cooked beef (or lamb), minced or diced 1/3 cup cooked rice Directions Fry vegetables & apple in drippings until soft & beginning to lose colour. Stir in flour & curry and cook for 1 minute. Add stock, tomatoes & seasoning. Bring to a boil, then lower heat, cover & simmer for about 1 1/2 hours, stirring occasionally. Sieve or liquidize the soup & return to pot. Add mince

Chinese Chews (otherwise known as Delicious Chews)

I got this recipe from a lady at church, after tasting it and absolutely falling in love with it. It is chewy and moist and very delicious. Caution! This is very addictive. Chinese Chews Do not asked me why it is called that. Nobody knows 1/4 tsp. Salt 2/3 cup All-purpose flour 1 tsp Baking Powder 1/2 to 1 cup Chopped walnuts 1 Cup of dates 3/4 cup Granulated sugar 1/2 tsp Vanilla 2 Large eggs well beaten Extra Sugar Combine first 3 ingredients in medium bowl. Mix in sugar, dates and nuts. Stir in the eggs and vanilla. Stir well. Transfer to greased 9 x 9 inch (22 x 22 cm) pan to an 1/2inch thickness. Bake in350°F (175°C) oven for about 25 minutes until wooden pick inserted in center comes out clean. Let stand on wire rack for 10 minutes. Cut into squares while still warm. Let stand in pan until cool. Dredge in sugar. Cuts into squares. Enjoy!

Apple Pancake

Woke up this morning looking for breakfast to be made using apples. I stumble upon this recipe and since my family absolutely love pancakes, that was an easy decision. It was super easy and  really good . Apple Pancake (Another one courtesy of recipezaar.com) 2 cups flour 2 beaten eggs 2 teaspoons baking powder 1 1/2 cups milk 1 teaspoon salt 2 tablespoons melted butter 2 tablespoons sugar 1 cup chopped apple Sift dry ingredients together. Combine eggs, butter, and milk. Pour into flour mixture and stir until smooth. Add apples and stir. Drop by spoonful and cook on a griddle. Et voila Enjoy!

Oatmeal Raisin Muffins

I have rediscovered a recipe that I had made a few years back and forgotten about. I saw that I had made a note of the fact that my boys had liked it. Sure enough, I made it today and it was a definite hit. Bonus: it is healthy! Oatmeal Raisin Muffins (Another recipe from Recipezaar) 1 cup rolled oat 1 cup buttermilk 3/4 cup flour 1/2 teaspoon baking powder 1/4 teaspoon salt 3/4 teaspoon baking soda 1/2 teaspoon cinnamon 2 eggs, beaten lightly 1/3 cup packed light brown sugar 6 tablespoons melted butter 1/3 cup raisins Directions Combine the oats and buttermilk and let stand 30 minutes. Sift together the flour, baking powder, salt, baking soda and cinnamon. Stir the eggs into the buttermilk mixture, then add sugar, butter, and flour mixture. Stir until just combined. The batter will be lumpy. Fold

Chocolate Brownie Pudding

This is one of our favorite dessert recipe. Easy and very good. Crowd and guest pleaser. Chocolate Brownie Pudding 1 cup flour 1 teaspoon baking powder 1/2 teaspoon salt 3/4 cup sugar *2 tablespoons Hershey Cocoa 1/2 cup milk 1 teaspoon oil 1 teaspoon vanilla TOPPING MIX: 3/4 cup sugar 2 cups hot water 1/4 cup cocoa Mix flour, baking powder, salt, sugar and cocoa. Add milk, vanilla and oil and mix until smooth. Place in greased baking dish. Topping Mix: 3/4 cup sugar and 1/4 cup cocoa. Mix together and sprinkle over batter. Gently pour 2 cups hot water over batter (do not stir!). Bake at 350 degrees for 45 minutes uncovered. Serve with real whipped cream or ice cream. (chopped walnuts may be added to the batter but are optional). This recipe is quick and easy and tastes like a hot fudge sundae! We like to serve it slightly warm. Store left overs (if there are any!) in refrigerator. * Use Hershey unsweetened cocoa only. ( But I have done it with other brands as well and they were ok)

Almond Double Chocolate Cookies

This week we made some cookies which was way overdue, according to my 3 year old. Here is the recipe enjoy . Almond Double Chip Cookies 3/4 cup of butter or margarine, softened 3/4 cup of packed light brown sugar 1 egg 1/2 teaspoon of almond extract 1 1/2 cups of all-purpose flour 1/4 teaspoon of baking soda A dash of salt 1 cup of semisweet chocolate chips 1 cup of vanilla milk chips 1/2 cup of slivered blanched almonds Preheat oven to 375'F. Line cookie sheets with parchment paper or leave ungreased. Beat butter and brown sugar in large bowl until creamy. Beat in egg and almond extract. Combine flour, baking soda and salt in small bowl. Blend in butter mixture. Stir in semisweet and vanilla milk chips and almonds. Drop dough by rounded tablespoonfuls, 3" apart, onto prepared cookie sheets. Bake 8-10 minutes or until light brown. DO NOT OVERBAKE. Cool 2 minutes on cookie sheets; remove to wire racks to cool completely. Have a great day , Joelle

Our favorite baked beans recipe

We've made this e few times now, and we absolutely love it. Baked beans (courtesy of Canadian Living) Ingredients 1 lb (500 g) dried navy beans (2-1/2 cups/625 mL) 2/3 cup (150 mL) bottled strained tomatoes 1/3 cup (75 mL) packed brown sugar 1/3 cup (75 mL) cooking or blackstrap molasses 1 tbsp (15 mL) sodium-reduced soy sauce 1 tsp (5 mL) dry mustard 1/2 tsp (2 mL) salt 1 sweetonion, chopped 4 oz (125 g) slab bacon, diced 2 oz (60 g) salt pork, diced P reparation: Rinse and soak dried beans overnight in three times their volume of water. (Or for quick-soak method, bring to boil; boil gently for 2 minutes. Remove from heat; cover and let stand for 1 hour.) Drain. In saucepan, cover beans again with three times their volume of water and bring to boil. Reduce heat, cover and simmer until tender, 30 to 40 minutes. Drain, reserving 2 cups (500 mL) of the liquid. Chocolate Mousse

Here is a recipe to a delicious and easy chocolate mousse. (Adapted from reciparzaar) Ingredients 8 ounces bittersweet chocolate finely chopped or chocolate chips 1/2 cup sugar 1/4 cup water 2 eggs, separated 2 extra egg yolks 1/3 cup expresso or very strong coffee 2 tablespoons Grand Marnier or any liqueur (I used 6 tablespoons unsalted butter, softened 2 cups heavy cream, whipped to soft peaks Melt the chocolate with coffee and liqueur in a saucepan on low heat Mix the sugar with 1/4 cup of water in a saucepan and bring to a boil. Boil 3 to 4 minutes. Meanwhile, place the 4 egg yolks in the bowl of an electric mixer. Gradually add the sugar syrup, beating constantly. Another bread recipe

By now, you will have find out that I love bread Here is another new favorite of mine. Egg-enriched White Loaf   (I have included the measurements for a bigger loaf in parenthesis) 1 Egg plus enough water to make 1 1/3 cup  (2 eggs plus enough water for 1 7/8 cup or 15 fl oz or 430ml) 2 tsp sugar (1 tbsp sugar) 1 tsp salt (1 1/2 salt) 2 Tbsp butter or margarine 4 1/2 cup flour (6 cups) 1 tsp yeast (1 1/2 tsp) Add everything to breadmaker, basic setting and voila. I have been making the dough in the bread machine though, and baking it in a bread pan. It is delicious! I also have substituted some whole wheat flour for some white flour. Enjoy!

Another coffee cake recipe

Blueberry Lemon Coffee Cake 2/3 cup butter, softened 1 1/2 cups granulated sugar 2 eggs 1 tbsp vanilla Gratted rind of 2 lemons 3 cups all-purpose flour 2 tsp baking powder 1/2 tsp salt 1/2 tsp baking soda 1 cup milk 1/2 cup yogurt or sour cream 1 1/2 cups frozen or fresh blueberries Preheat oven to 350 degree. In a large bowl, beat butter and sugar until light and fluffy; beat in eggs, 1 at a time. Beat in vanilla and lemon ring. In separate bowl, combine flour, baking powder, baking soda and salt. Stir milk with yogurt and stir into eggs mixture alternately with flour mixture, making 3 additions of dry ingredients and 2 of wet. Spoon half the batter into a greased bundt pan or 9x13 inch pan. Sprinkle with blueberries. Spoon the remaining batter over top, smoothing gently. Bake for about 60 min for bundt pan and 45min for the 9x13 pan. Let cool 10 min. before removing from pan. Enjoy!

Coffee cake recipes

Here are some of my favorite coffee cake recipes: Sunday Coffee Cake Strawberry Coffee Cake Sue's Coffee Cake Blueberry Apple Coffee Cake 1 cup of butter (softened) 1 1/2 cup granulated sugar 2 eggs 1 1/2 cups milk 1/2 cup sour cream 1 tsp vanilla 5 cups all purpose flour 1 tbsp baking powder 1 tsp baking soda 1 tsp salt 2 cups fresh or frozen blueberries 1 cup diced unpeeled apple 2 tbsp grated lemon peel Preheat oven to 350 degrees In a large bowl cream butter and sugar until light and fluffy. Beat in eggs, one at a time. Add milk, sour cream and vanilla. Gently stir in flour, baking powder, baking soda and salt. Fold in the fruits and lemon peel. Spoon batter evenly into 2 greased 9"x5" loaf pans. Bake for 60-65 min. Allow to cool for 15 min before removing from pan. The recipe can easily be halved. You can add a crumb topping made of 2 tbsp flour, 1tbsp sugar, 1 tbsp butter and 1/2 tsp lemon peel. You can also substitute raspberries for blueberries. Enjoy!

A couple of treasured recipes for breakfast

Here are some of my cherished breakfast recipes: Copycat Cinnabon for the Bread machine Oatmeal Cookie Pancake Monkey Bread 1/2 cup milk 2 tbs. water 1 large egg 1 Tbs. butter 1/2 tsp. salt 2 1/4 cups of flour 1 1/2 tsp. yeast 1/3 cup brown sugar 1/2 tsp. cinnamon 2-4 tbsp melted butter Put the first 7 ingredients in bread machine on the dough setting. Once done, separate the dough in balls (about 20). Dips the balls generously in 2-4 tbsp of melted butter, then in the sugar-cinnamon mixture. Arrange the balls in a greased oven proof ring mold, or a bundt pan, in two overlapping layers.  Cover and let rise until doubled in size (30-45 min). Bake at 375 for 25-30 min.

Valentine menu

This post is late, but better late than never. For Valentine, my hubby made steaks and Roasties Then I made a Trifle. Everything was great. Thought I'd share the Trifle recipe: 1 (14 ounce) can sweetened condensed milk chilled 1 cup cold water 1 teaspoon almond extract 1 (3 1/2 ounce) package vanilla instant pudding mix 2 cups whipping cream whipped 1 (7 inch) cake , cut into 1 inch pieces 2 tablespoons strawberry or raspberry jam (depending on what fruit you are using 2 cups strawberry, Other fruits (optional) Some kind of wine or liqueur (optional) Directions 1 In a large mixing bowl, beat the milk, water and extract until blended. Add pudding mix; whisk for 2 minutes. Let stand for 2 minutes or until soft-set. Cover and chill until mixture is partially set. Fold in the whipped cream. 2 Mix the fruits with the alcohol. Place half of the cake cubes in a 2 quart glass trifle bowl. Top with half of the cream mixture. Carefully spread w

Scone recipe

I found this recipe for scones and they are excellent. I am not a big scone fans (i am not a breakfast fan, but my hubby is). Everyone loved these from the 3 year old, passing through the 5 year old to the man of the house. Enjoy! 2 cups flour 3 tablespoons sugar plus more for sprinkling tops 1 tablespoon baking powder 3/4 teaspoon salt 6 tablespoons butter cold and cut into pieces (3/4 stick) 1 1/2 cups blueberries picked over and rinsed 1 teaspoon lemon zest grated 1/3 cup heavy cream or milk,  plus more for brushing tops 2 large eggs , lightly beaten Directions Heat  oven to 400 degrees.  In a large bowl, sift together flour, 3 tablespoons sugar, baking powder, and salt. Using a pastry blender, or two knives, cut in butter until the largest pieces are the size of small peas. Using a fork, whisk together cream and egg in a liquid measuring cup. Make a well in the center of dry ingredie
