Wheat free recipes

My youngest son (3) has been having pretty bad ecxema. A friend of mine told me to try to get him off wheat to see if that could be a reason. So this week has been wheat-free for him. I really feel bad for him since he is a bread and jam and butter boy. I must say though that I have been impressed by his restraint and compliance with the new rule. Anyway, I found these two wheat-free recipes that I tried this week and which everybody enjoyed. So here they are: Wheat-free feather pancake Ingredients: 4 eggs 1 tsp. baking powder 3 tbsp. sugar 1/4 c. water or milk 1/2 tsp. salt 1 1/2 c. white rice flour 2 c. sour cream or yogurt  (Any kind of yogurt works well) Directions: Blend all ingredients until there are no lumps. Drop batter by spoon onto lightly greased griddle until 1 side bubbles. Flip pancakes and bake until golden brown. Can be covered and chilled overnight. Cut it in half when I made it.
