Apple Pie

It is apple season so here is a classic recipe for a classic dessert:

Ingredients:

For the dough:

2 cups of flour

2/3 cup butter

1 tsp salt

5-6 tbsp of water

For the filling

2 1/4 lbs apples (1kg)

3/4 cup raisins (washed and dried, 100g) (optional)

3/4 cup granulated sugar (40g)

2 teaspoons cinnamon (or more to taste)

1/2 teaspoon nutmeg (to taste)

2 1/2 teaspoons lemon juice (or more to taste)

3 Tbsp flour or semonila

Directions:

For the dough:.

Mix the flour and the salt in a bowl.

Cut the butter or margarine into small cubes and add these to the flour mixture using a pastry cutter until the mixture look crumbly.

Add the water in 1-2 Tbsp at a time and mixing it in with a fork.

Using one hand, kneed it to form the dough - you should be able to form it into a ball.

Put the ball of dough in the fridge wrapped in wax paper.

For the filling:

Peel the apples and slice them (allow the sizes to vary--it'll taste better).

In a (large) bowl, combine apple, raisins (if using), sugar, cinnamon, nutmeg, the lemon juice and the semolina or flour.

Mix well and allow the flavors to blend, stirring occasionally.

Line the pie plate with the rolled out dough cut in half, and add the filling.

Roll out the other dough and place on top, using whatever form or shape you wish (the picture shows a lattice top).

Bake the pie at 400 for 10 minutes then at 375 for another 40-45 minutes.

Enjoy warm with whipped cream or ice cream.

Apple banana bread

My kids love banana bread, and it's apple season, so here is a combination of the two. As usual courtesy of Recipezaar. I made a half recipe and it did not last the day. Banana Apple Bread  1 3/4 cups flour 3/4 teaspoon baking soda 1/4 teaspoon salt 1 cup sugar A pinch of cinnamon 2 eggs 2/3 cup vegetable oil 3 tablespoons milk 1/2 tsp vanilla 2 large bananas (mashed) 1/2 cup nuts (chopped) 1 large apple (peeled, cored, chopped) Directions Mix together flour, baking soda, salt, cinnamon and sugar. Blend in eggs, oil, and milk and vanilla. Stir in banana, apple, and nuts. Pour batter into greased loaf pan. Bake at 350 degrees for about 1 hour or until toothpick test comes out clean. Enjoy!
