Menu planning monday

My hubby's been doing the menu planning and the executing as well. (one blessing from his being on sick leave). He has been making all these wonderful meals and I keep thinking I should share them. Anyway here we are finally. Monday: Chicken Enchiladas Tuesday: Asian Pork Roast with Rice Wednesday: leftover lasagna Thursday: Pork stir fry with Noodle (using leftover pork from last Tuesday) Friday: Chicken Adobo with Rice Saturday: Beef ribs (we are taking it to a get together at a picnic) Sunday: Beef stew

Valentine menu

This post is late, but better late than never. For Valentine, my hubby made steaks and Roasties Then I made a Trifle. Everything was great. Thought I'd share the Trifle recipe: 1 (14 ounce) can sweetened condensed milk chilled 1 cup cold water 1 teaspoon almond extract 1 (3 1/2 ounce) package vanilla instant pudding mix 2 cups whipping cream whipped 1 (7 inch) cake , cut into 1 inch pieces 2 tablespoons strawberry or raspberry jam (depending on what fruit you are using 2 cups strawberry, Other fruits (optional) Some kind of wine or liqueur (optional) Directions 1 In a large mixing bowl, beat the milk, water and extract until blended. Add pudding mix; whisk for 2 minutes. Let stand for 2 minutes or until soft-set. Cover and chill until mixture is partially set. Fold in the whipped cream. 2 Mix the fruits with the alcohol. Scone recipe

I found this recipe for scones and they are excellent. I am not a big scone fans (i am not a breakfast fan, but my hubby is). Everyone loved these from the 3 year old, passing through the 5 year old to the man of the house. Enjoy! 2 cups flour 3 tablespoons sugar plus more for sprinkling tops 1 tablespoon baking powder 3/4 teaspoon salt 6 tablespoons butter cold and cut into pieces (3/4 stick) 1 1/2 cups blueberries picked over and rinsed 1 teaspoon lemon zest grated 1/3 cup heavy cream or milk,  plus more for brushing tops 2 large eggs , lightly beaten Directions Heat  oven to 400 degrees.  In a large bowl, sift together flour, 3 tablespoons sugar, baking powder, and salt. Wheat free recipes

My youngest son (3) has been having pretty bad ecxema. A friend of mine told me to try to get him off wheat to see if that could be a reason. So this week has been wheat-free for him. I really feel bad for him since he is a bread and jam and butter boy. I must say though that I have been impressed by his restraint and compliance with the new rule. Anyway, I found these two wheat-free recipes that I tried this week and which everybody enjoyed. So here they are: Wheat-free feather pancake Ingredients: 4 eggs 1 tsp. baking powder 3 tbsp. sugar 1/4 c. water or milk 1/2 tsp. salt 1 1/2 c. white rice flour 2 c. sour cream or yogurt  (Any kind of yogurt works well) Directions: Blend all ingredients until there are no lumps. Drop batter by spoon onto lightly greased griddle until 1 side bubbles. Flip pancakes and bake until golden brown. Can be covered and chilled overnight. Cut it in half when I made it. Quiet

I have been quiet for a while as my husband was having some health issues. We are still dealing with those but hopefully, i'll be able to post a bit more. Thanks for reading and have good day.

waffle batter

I have finally found a waffle batter recipe that works for me, and I love it, so does everybody else in the familly. since i bought myself a waffle maker, earlier this year, I have been trying waffle recipes and they all kept spilling out of the waffle maker. I jst could not understand what was going on. I tried a recipe this morning and they came out perfect, plus they tasted great. Here is the recipe: 1 3/4 cup flour 2 Tbsp sugar 1 Tbsp baking powder 2 eggs 1 3/4 milk 1/2 cup oil or butter (melted) 1 tsp vanilla Combine all ingredients. Stir until moistened. Refrigerate until ready to use. Use according to your waffle maker. Enjoy!

Tostitos tacos

We are not fan of tostitos, yet we have a friend who keeps giving us some. Well, we found a way of making use of them. We use them as tacos and eat them topped with Texmex ground beef, sour cream, cheese and lettuce. Here is the recipe I use for the groung beef: 1 1/2 tbsp chili powder 1 1/2 tsp paprika 1 1/2 tsp cumin 1/2 tsp salt 1 tsp oregano 1 tsp garlic powder or crushed garlic 1/2 chopped onion some cayenne pepper if you like it spicy. Brown groud meat, then mix in the seasonings and add 2/3 - 3/4 cup water, and let it simmer until consistency you want, about 10 minutes. Adjust seasonings to taste, et voila.
