Wheat free recipes

My youngest son (3) has been having pretty bad ecxema. A friend of mine told me to try to get him off wheat to see if that could be a reason. So this week has been wheat-free for him. I really feel bad for him since he is a bread and jam and butter boy. I must say though that I have been impressed by his restraint and compliance with the new rule. Anyway, I found these two wheat-free recipes that I tried this week and which everybody enjoyed. So here they are:


Wheat-free feather pancake


Ingredients:

4 eggs
1 tsp. baking powder
3 tbsp. sugar
1/4 c. water or milk
1/2 tsp. salt
1 1/2 c. white rice flour
2 c. sour cream or yogurt  (Any kind of yogurt works well)



Directions:

Blend all ingredients until there are no lumps. Drop batter by spoon onto lightly greased griddle until 1 side bubbles. Flip pancakes and bake until golden brown. Can be covered and chilled overnight.


Cut it in half when I made it. Will do the whole recipe next time.


Rice flour crepes (wheat free)





  • 1 cup rice flour

  • 1/4 teaspoon salt

  • 2 eggs

  • 1 cup milk

  • 1 tablespoon melted margarine


Directions:



  1. In a medium sized mixing bowl, beat together all ingredients until smooth.

  2. Pour, using 1/4 cup measure into a medium sized, hot, non-stick (or greased) skillet.

  3. Turn skillet to thinly, evenly distribute batter in a circle.

  4. Cook about 30 seconds per side.


I made sweet crepes with these. Omitted the salt and put 2 tbs sugar instead. Then filled them with an apple banana filling. Then, spread melted butter and spinkled some sugar-cinnamoon on top; And finally, baked it for 20 min in a 350 oven.


Apple-banana filling:


Cook together on a stove, 2 apples, 1/2 tsp cinnamoon, nutmeg, 4 tbs of sugar and some lemon juice. Mash along with a ripe banana. Set aside. Can add some raisins soaked in rum.

  1. We also went through this problem when my now 22 year-old son was 3. After trying different dietary changes, we finally discovered that for him, peanut butter was the cause. Does keeping him from wheat seem to be helping? I hope you can figure out what is causing it soon so your little boy will have some relief. The recipes look yummy!

Woke up this morning looking for breakfast to be made using apples. I stumble upon this recipe and since my family absolutely love pancakes, that was an easy decision. It was super easy and  really good . Apple banana bread

My kids love banana bread, and it's apple season, so here is a combination of the two. As usual courtesy of Recipezaar. I made a half recipe and it did not last the day. Banana Apple Bread  1 3/4 cups flour 3/4 teaspoon baking soda 1/4 teaspoon salt 1 cup sugar A pinch of cinnamon 2 eggs 2/3 cup vegetable oil 3 tablespoons milk 1/2 tsp vanilla 2 large bananas (mashed) 1/2 cup nuts (chopped) 1 large apple (peeled, cored, chopped) Directions Mix together flour, baking soda, salt, cinnamon and sugar. Blend in eggs, oil, and milk and vanilla. Stir in banana, apple, and nuts. Pour batter into greased loaf pan. Bake at 350 degrees for about 1 hour or until toothpick test comes out clean. Enjoy!
