Apple banana bread

My kids love banana bread, and it's apple season, so here is a combination of the two. As usual courtesy of Recipezaar. I made a half recipe and it did not last the day.

Banana Apple Bread


  •  1 3/4 cups flour

  • 3/4 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1 cup sugar

  • A pinch of cinnamon

  • 2 eggs

  • 2/3 cup vegetable oil

  • 3 tablespoons milk

  • 1/2 tsp vanilla

  • 2 large bananas (mashed)

  • 1/2 cup nuts (chopped)

  • 1 large apple (peeled, cored, chopped)


Directions




  1. Mix together flour, baking soda, salt, cinnamon and sugar.



  2. Blend in eggs, oil, and milk and vanilla.



  3. Stir in banana, apple, and nuts.



  4. Pour batter into greased loaf pan.



  5. Bake at 350 degrees for about 1 hour or until toothpick test comes out clean.

    We just finished our treat, warm and fresh from the oven. It was really good! Everyone loved it!


    I did make a couple of changes to make it more healthy so I thought I would share them with you.


    -Instead of veg. oil, I used olive oil and used a little less than required ( I ran out).

    -Whole wheat pastry flour instead of the regular.

    -1 teaspoon of Stevia in place of sugar.

  4. This bread was such a hit with my husband, he hinted for me to make it regularly to send to work with him in his lunch. Guess I better get to the store and buy more bananas! Lots of them! I'll have to make one loaf for him and one for us. :)

  Here is a great Thanksgiving recipe: Stuffed Pumpkin Ingredients For the roasted squash 2 Acorn or pepper squash, halved through the stem and seeed 2 tbsp of liove oil 1/2 tsp salt 1/4 tsp pepper sage, 4 cloves garlic For the Stuffing: 1/4 cup olive oil 1 pd of ground meat (used beef) 1 ognion, finely dices 1 carrot, grated 1 celery grated 1/4 cup of mushroom 1 clove garlic minced 1/4 tsp cayenne pepper 1/4 tsp thyme\1 tsp salt 1/4 pepper 2 tbp sage 1 1.2 tbp tomato paste 2 apples diced 1/2 cup breadcrumbs 2 tbsp parsley 2 tbsp chives 1 edd lighty beaten 2 tbsp maple syrup   Procedure: Roast the squash: Brush olive on in th inside of the squash. Sprinkle with salt and pepper. Place each halves open side down over a piece of garlic. Bake in a 400 oven until the squash is tender when pierced with a knive, but still hold its shape, 35-45 minutes. Favorite bread recipe

Here is a recipe to our favorite bread recipe: Portuguese Sweet Bread 1 cup of milk 1 egg beaten 2 tbsp margarine or butter 1/3 cup sugar 3/4 tsp salt 3 cups flour (I replace 1/3 of the flour with whole wheat flour) 2 1/2 tsp yeast Put ingredients in bread maker according to your machine's instruction. I use the dough setting. Then shape it the way you like it and let it rest for about 45 minutes. Bake at 350-375 for 30 minutes. Et voila. This last time, since I prefer smaller loaf, I doubled the recipe, cut the dough in half, baked one half and froze the other one.\ Enjoy!
