Oatmeal Raisin Muffins

I have rediscovered a recipe that I had made a few years back and forgotten about. I saw that I had made a note of the fact that my boys had liked it. Sure enough, I made it today and it was a definite hit. Bonus: it is healthy!

Oatmeal Raisin Muffins (Another recipe from Recipezaar)

  • 1 cup rolled oat

  • 1 cup buttermilk

  • 3/4 cup flour

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon salt

  • 3/4 teaspoon baking soda

  • 1/2 teaspoon cinnamon

  • 2 eggs, beaten lightly

  • 1/3 cup packed light brown sugar

  • 6 tablespoons melted butter

  • 1/3 cup raisins

Directions

  1. Combine the oats and buttermilk and let stand 30 minutes.

  2. Sift together the flour, baking powder, salt, baking soda and cinnamon.

  3. Stir the eggs into the buttermilk mixture, then add sugar, butter, and flour mixture.

  4. Stir until just combined.

  5. The batter will be lumpy.

  6. Fold in the raisins. (I also have added apples once, and it turned out pretty good too)

  7. Spoon into a muffin tin about 2/3 full.

  8. Bake at 400º F for 15 to 20 minutes.

Enjoy!

Favorite bread recipe

Here is a recipe to our favorite bread recipe: Portuguese Sweet Bread 1 cup of milk 1 egg beaten 2 tbsp margarine or butter 1/3 cup sugar 3/4 tsp salt 3 cups flour (I replace 1/3 of the flour with whole wheat flour) 2 1/2 tsp yeast Put ingredients in bread maker according to your machine's instruction. I use the dough setting. Then shape it the way you like it and let it rest for about 45 minutes. Bake at 350-375 for 30 minutes. Et voila. This last time, since I prefer smaller loaf, I doubled the recipe, cut the dough in half, baked one half and froze the other one.\ Enjoy!
