Blueberry Buckle

Blueberry Buckle

  • 3/4 cup caster sugar

  • 1/4 cup butter

  • 2 large eggs

  • 1/2 cup milk

  • 1 1/2 cups plain flour

  • 2 teaspoons baking powder

  • 1/2 teaspoon salt

  • 1/2 teaspoon nutmeg

  • 1/4 teaspoon clove

  • 2 cups frozen blueberries or 2 cups fresh blueberries, if you can get them


Topping:

Directions:

1. Pre-heat the oven to 180*C/375*F.

2.  Grease a 9 inch square pan.

3. Cream together the sugar and butter until light and fluffy.

4 . Beat in the eggs and milk.

5 . Sift together the flour, baking powder, salt, nutmeg and cloves.

6.  Stir into the creamed mixture.

7. Carefully fold in the blueberries.

8 . Spread the batter in the prepared pan.

9.  Rub the topping ingredients together until crumbly and sprinkle over top.

10. Bake in the preheated oven for about 45 minutes or until the top springs back when lightly touched.

11 Serve warm with ice cream or whipped cream.

Favorite bread recipe

Here is a recipe to our favorite bread recipe: Portuguese Sweet Bread 1 cup of milk 1 egg beaten 2 tbsp margarine or butter 1/3 cup sugar 3/4 tsp salt 3 cups flour (I replace 1/3 of the flour with whole wheat flour) 2 1/2 tsp yeast Put ingredients in bread maker according to your machine's instruction. I use the dough setting. Then shape it the way you like it and let it rest for about 45 minutes. Bake at 350-375 for 30 minutes. Et voila. This last time, since I prefer smaller loaf, I doubled the recipe, cut the dough in half, baked one half and froze the other one.\ Enjoy!

Apple Pancake

Woke up this morning looking for breakfast to be made using apples. I stumble upon this recipe and since my family absolutely love pancakes, that was an easy decision. It was super easy and  really good . Apple Pancake (Another one courtesy of recipezaar.com) 2 cups flour 2 beaten eggs 2 teaspoons baking powder 1 1/2 cups milk 1 teaspoon salt 2 tablespoons melted butter 2 tablespoons sugar 1 cup chopped apple Sift dry ingredients together. Combine eggs, butter, and milk. Pour into flour mixture and stir until smooth. Add apples and stir. Drop by spoonful and cook on a griddle. Et voila Enjoy!
